Chicken Parmesan
2 boneless, skinless chicken breast halves
1/2 cup butter
3/4 cup Italian seasoned dry bread crumbs
1 jar (26 ounces) marinara sauce
1 cup Parmesan -or- shredded Mozzarella cheese
Preheat oven to 400°F.
Dip chicken in butter, then bread crumbs, coating well.
In a glass baking dish, arrange chicken.
Bake uncovered 20 minutes.
Pour the marinara sauce over chicken, then top with cheese.
Bake an additional 10 minutes or until chicken is no longer pink.
Serve if desired, with hot cooked pasta.
Shell Pasta
Shell pasta-1 packet cooked as per package directions
1 red bell pepper/red capsicum cut into squares
5 cloves of garlic finely chopped
1 tsp dried basil leaves
1 tsp black pepper powder
lemon juice-1 tbsp
Red chilly sauce-1 tsp
italian pasta tomato sauce-as needed
Salt to taste
Parmesan cheese
Olive oil-1 tbsp
Procedure:-
- Once pasta is cooked, strain it . Run it through cold water so it does not stick.
- In a pan take oil & add the garlic, then add the bell pepper & fry for a minute.
- Then add salt. Then add the cooked pasta, add pasta sauce, red chilly sauce, black pepper powder, dry basil leaves. Mix well.
- Then add the lemon juice. Sprinkle parmesan cheese on top. Serve hot.
Pasta
Ingredients:-
Spaghetti or Penne or Ziti pasta
1 tbsp butter
1tbsp olive oil
1 tbsp fresh lime juice
2-5 cloves garlic
Basil leaves half cup
1/2 cup parmesan cheese
1/2 cup green beans
1 onion
1/2 cup carrots
1/2 tsp black pepper powder
1/2 tbsp siracha chilly sauce
salt to taste
Procedure:-
1.Bring water to a boil & cook pasta with salt & olive oil.(follow package directions)
2.Drain the water from the pasta & keep it aside.
3.In a pan take butter then add olive oil then put the garlic cloves & stir them.
4.Then sprinkle fresh lime juice & basil leaves then put the onions & the vegetables alongwith salt & pepper & then saute them.
5.Then put the cooked pasta & the chilly sauce & mix or toss well. Put salt as per taste.
6.Sprinkle parmesan cheese on top.
Chicken Sandwich
Buffalo Chicken Wings
Ingredients:-
1.10 to 20 chicken wings
2.1 tsp black pepper
3.Salt as per taste
4.1/2 cup of hot sauce(Frank's or any brand)
5.1/2 cup butter
Procedure:-
1.Wash chicken wings & pat them dry.
2.Cut them in 2 pieces from middle.
3. Sprinkle salt & pepper on them.
4. in a bowl make the sauce by mixing hot sauce & butter.
5. Preheat oven to about 400 degrees & then put the wings inside.
6. Watch them as they change color.
7. Brush them with the buffalo chicken sauce roast them for sometime, then turn them to the other side again brush them with sauce & cook them till done. Enjoy them with blue cheese dressing or just like that.
8. You can also deep fry them.
Barbeque Chicken Wings
Ingredients:-
!1.10-20 chicken wings
2. 1/2 bottle of honey barbeque sauce
3. Salt to taste
4. Black pepper powder
Procedure:-
1.Wash chicken wings & pat them dry.
2.Cut them in 2 pieces from middle.
3. Sprinkle salt & pepper on them.
4. Then apply barbeque sauce.
5. Preheat oven to 400 degrees & place the chicken wings in the oven.
6. Roast them when done.
7. This recipe goes very well with kids.
Shrimp Scampi
Spagetti-1 packet
Shrimp-10-15 deveined
Olive oil
Butter-2tbsp
Black pepper
Dried Basil leaves
Garlic petals
Lemon juice
Salt to taste
Procedure;-
(1)Cook pasta as per package directions adding little salt & olive oil.
(2)Rub salt & pepper over the shrimp.
(3)In a pan put olive oil & butter & add garlic . Then add the shrimp. Cook the shrimp till pink that is half cooked. Sprinkle lemon juice
(4)Then add the spagetti along with the lemon juice & basil leaves add salt to taste.& black pepper if needed.
Pasta with pesto sauce
Pasta-Cooked as per packet instructions
Store bought pesto sauce
2-3 cloves of garlic finely chopped
1 onion cut into long strips
1 tomato finely chopped
1 tsp black pepper powder
1 tsp red chilly sauce or to taste
Salt to taste
Parmesan cheeese
1 tsp olive oil
Method:-
- In a thick bottomed pan heat oil, once oil is hot add garlic & fry for 1/2 a minute, then add the onions & fry them for 2-3 minutes till they are golden brown.
- Then add the tomatoes.
- Add the pesto sauce & cook for a minute, then add the cooked pasta. Mix well. Add black pepper powder & salt.
- Sprinkle parmesan cheese on top. Serve hot with italian bread.
Chicken Burger/Sandwich
Burger buns
Butter
Chicken without bones
Lemon juice
Salt to taste
Olive oil(2 tbsp)
Black pepper as needed
Red chilly sauce(optinal)
Bread crumbs
Few Spinach leaves
Procedure:-(1)In a mixing bowl mix olive oil, butter, salt lime juice & black pepper powder along with red chilly sauce. Dip the chicken patty into it.
(2)Coat it with bread crumbs & grill them in a grilling pan or oven at 400 degrees F.You can also fry them in oil.(3)Take the buns & on one of them apply butter. Then keep spinach leaves & then the cooked chicken patty. Then top it with the other bun. Serve hot with chips.
Tandoori Chicken Wrap
Store bought tortilla
Tandoori chicken(please refer to tandoori chicken recipe in the chicken dishes section or appetizers & snacks section)
1/2 onion finely chopped
1 cucumber seeds removed finely chopped
1 tomato seeds removed finely chopped
1 small carrot finely chopped
Salt to taste
1 cup curd
1 tsp chaat masala
Hummus store bought
Mint chutney(either store bought or refer to accompaniments section if making from scratch)
Few lettuce leaves
Method:-
- In a mixing bowl whisk the yogurt & add the onions, cucumbers, tomatoes, carrots with chaat masala & salt. Our salad is ready.
- Cut the tandoori chicken into small pieces. Preferably use boneless chicken.
- Take a tortilla. Put the hummus on half of the side. Top it with the mint chutney. Put the salad on top.
- Then put the chicken & finally put the lettuce leaves. Roll the tortilla into a wrap. Cut into 2 pieces from center if desired.
- Serve with chips.
Spinach & Green Pepper Pasta
Spaghetti or Penne or Ziti pasta

1 onion cut into thin strips
1 cup tomato puree
1/2 cup bell pepper cut into long strips
1/2 cup celery finely choppes
1/2 tsp black pepper powder
1/2 tbsp siracha chilly sauce
salt to taste
Procedure:-
1.Bring water to a boil & cook pasta with salt & olive oil.(follow package directions)
2.Drain the water from the pasta & keep it aside.
3.In a pan take butter then add olive oil then put the garlic cloves & stir them.

Orange & Herb Chicken
* 8 pieces Chicken legs
* Salt
* 4 cloves of garlic
* EVOO – Extra Virgin Olive Oil, drizzling
* Black pepper
* 4 navel or blood oranges
* 6 fresh bay leaves
* 3 medium red onions, peeled, root-end in tact and cut into wedges
* 1 teaspoon crushed red pepper flakes, 1/3 palmful
* Dry oregano leaves, a couple of tablespoons
* 1/4 cup good quality orange blossom honey
Procedure:-
Yields: Serves 4
Wash and dry chicken and season with salt, then refrigerate for a few hours or overnight.
Preheat oven to 425˚F.
Cut ends off the garlic heads and dress with a little EVOO, salt and pepper. Wrap in foil and place in oven, roast 45 minutes until golden and soft.
Meanwhile, in a roasting pan or large casserole, toss 2 sliced or wedge-cut oranges with red onions, bay leaves and a liberal drizzle of EVOO – enough to thinly coat the oranges, bay leaves, and onions (a couple of tablespoons). Season with salt and pepper and scoot the oranges and onions off to the sides of the pan.
Arrange chicken in pan and rub with EVOO to coat the skin. Season chicken with black and red pepper then scatter the oregano over the chicken, onions and oranges. Add juice of 2 oranges. Drizzle honey around the pan and place in the oven. Toast 45 minutes or until juices run clear.
Serve chicken with oranges and onions, and with pan juices spooned over top and a whole head of roasted garlic along side. Pop cloves away from skins as you eat your chicken or spread on crusty bread.
Asian Chicken Wings
I packet of chicken wings or winglets
1/4 cup of soya sauce
1/4 cup of red chilly sauce or to taste
Salt to taste
Black pepper powder to taste
1/2 cup tomato ketchup
Green onion leaves for garnishing
Procedure:-
(1)Cut the wings into two pieces from between & wash them & pat them dry with a paper napkin.
(2)Then in a small bowl mix the three sauces.
(3)Add salt & pepper powder to the chicken wings. Then pour the sauce mixture on them.
(4)Preheat the oven to 450 degreesF. Put the chicken wings in the oven & broil them for about 15 minutes on both sides till done.
(5)Garnish with spring onion leaves on top.
Garlic Bread
1 long French or Italian loaf
1/2 cup butter
2 tablespoons dried oregano
4 to 5 large cloves garlic, peeled
salt
freshly ground black pepper, to taste
Parmeasan cheese
Preheat oven at 400F.
Slice loaf into 1 1/4 inch thick slices by slicing 3/4 way down through the loaf but leaving the bottom quarter unsliced to keep the loaf intact. Place loaf on a sheet of aluminum foil (shiny side in). Set aside.
In a food processor, process butter, garlic and oregano until light. Add salt and pepper, to taste.
Spread butter onto both sides of the bread slices; press the slices back together and wrap tightly in the foil. Place loaf on oven rack directly and bake for 10 minutes; peel back foil and bake for another 5 minutes or until bread begins to brown and crisp along edges. Place bread on a warm serving dish; sprinkle top lightly with coarse salt and.
Chicken Quesadilla(Indo-Mexican style)
Soft tortilla as needed
Minced chicken-1/2 1b
Mexican style cheese
Taco seasoning-1 pack
Lettuce or cabbage leaves chopped.
Ginger-Garlic-Green chilly-coriander leaves paste-1 tbsp
Onion-1 finely chopped
Indian chicken masala-1 tsp
Salt to taste
Oil-2 tbsp
Red Chilly powder-1 tsp
Tomatoes-1 finely chopped
Procedure for the Quesadilla :-
(1)Wash the minced chicken & drain completely. Apply ginger-garlic-green chilly-coriander paste alongwith indian chicken masala, salt & red chilly powder.
(2)In a pan heat oil & to it add the onions till onions turn golden brown.
(3)To it add the marinated chicken & tomatoes add 2 cups of water & cook the chicken till fully cooked & dry.
(4)Add salt as needed.
(5)Take one to tortilla & place some of the chicken mixture on it & add the cheese, seasoning & lettuce or cabbage leaves. Layer it in this manner. Then put the another tortilla on top & roast it on a tawa or make it in the Quesadilla maker till cheese melts.
(6)Serve hot.
Corn & Tomato Salsa
Black Beans – 1 can, drained & rinsed
Whole Kernal Sweet Corn – 1 can, drained
Onion – 1/2 medium, finely chopped
Tomato – 1 mediem, finely chopped
Jalapenos – deseeded and finely chopped
Cilantro – 5 sprigs, finely chopped
Salt – to taste
Lime Juice – to taste
Taco Seasoning – to taste
Procedure
1. Combine all the ingredients in a bowl.
2. Allow the mixture to marinate for approximately 30 minutes.
3. Serve with Corn Chips or you can have it without them too.
Lettuce Salad
Lettuce- 1 packet
Carrots:- Cut into long strips
Onions-cut into long strips
Cherry tomatoes-5-10
Cucumber cut into rounds
Walnuts optional
Salad dressing-Caesar or Thousand Island
Shredded parmesan cheese
Salt to taste'
Pepper to taste
Procedure:-In a large mixing bowl toss all the above ingredients & serve.
Salad dressing second type
Ingredients:-
Honey mustard sauce-1 tbsp
1 tsp olive oil
1 tsp vinegar
1 tsp crushed black pepper powder
1 tsp salt
1 tsp honey if needed
Combine the above ingredients in a bowl & pour over the salad.
CheeseTortellini in Tomato Sauce
Cheese stuffed tortellini in tomato sauce
1 packet tortellini cooked according to package directions
1 cup italian tomato sauce
Parmesan cheese
2 garlic cloves minced
1/2 medium onion cut into long strips
Mushrooms half cups
2 tbsp olive oil with butter
red pepper flakes
Salt as needed.
Procedure:-
- Cook tortellini according to package directions.
- In a skillet take butter & oil, once hot add garlic then add onions & stir for a minute. Then add the mushrooms.
- Then add the red pepper flakes with the tomato sauce. Cook for a minute. Pour the sauce over the cooked tortellini.
- Sprinkle parmesan cheese on top.
