Sweet Corn Soup
Ingredients:-1 can sweet corn (cream style)
1 can vegetable broth
1 tbsp vinegar
1 tsp soya sauce
1/2 tsp sugar
1/2 tsp white pepper powder
1 tbsp oil
4 cups water
3 tbs corn flour dissolved in 1 cup of cold water
French beans-cut diagonally
Carrots-chopped fine
Celery-chopped into pieces
1 tsp ginger-garlic paste
1 tsp-red chilly sauce optional
Salt to taste
Green onion leaves for garnishing
Procedure:-
(1)In a pan put oil, once hot add the ginger-garlic paste & fry for a few seconds. Then add the vegetables one by one & stir for a few seconds, then add the sweet corn & stir for a minute.
(2)Then add the vegetable broth along with the soya sauce, chilly sauce, vinegar, sugar,salt & white pepper powder along with the required amount of water.
(3)Then add the corn flour dissolved in water & bring it to a boil stirring once in a while.
(4)Finally garnish with green onion leaves on top.
(5)Serve hot.
Vegetable Fried Rice
Ingredients:-
2 cups sona masoori rice
If sona masoori rice is not handy basmati rice can also be used
1/2 cup green beans cut small
1/2 cup carrots cut into small squares
1/4 cup red bell pepper cut into long strips
1/4 cups sprouted beans available in chinese stores(optional)
1/2 cup celery finely chopped
Spring onion cut fine
Spring onion greens finely chopped
soy sauce-1 tbsp
Red chilly sauce to taste
1/4 tsp white pepper powder
1 tsp ginger-garlic paste
1/2 tbsp vinegar
2 eggs (optional)
Salt to taste
2 tbsp oil
Procedure:-
(1)Cook rice with a little oil till it is half cooked.
(2)In the remaining oil first fry the eggs, scramble them & keep aside.
(3)In the same oil add the spring onions(white part) fry them for 1 min & then add the ginger-garlic paste.
(4)Then add the vegetables & fry them for a 1 minute & add little salt. Add the sprouted beans.
(5)Add the cooked rice along with the sauces, vinegar & white pepper powder.
(6)Then mix in the eggs.
(7)Then adjust the salt & sprinkle spring onion greens.
Hot & Sour Soup
Oil – 1 Tbsp
Spring Onions-finely chopped
Ginger-Garlic paste-2 tsp
Peas & Carrots -– 1/2 cup
Frozen Corn – 1/4 cup
Green Beans – 1/4 cup
Celery – 1/4 cup, thinly sliced
Cabbage – 1/2 cup, thinly sliced
Vegetable Broth/Stock – 4 cups
Veg Noodles – 1 cup
Soy Sauce – to taste
Red Chili Sauce – to taste
Black Pepper – to taste
Vinegar – 1 Tbsp, or to taste
Corn Starch – 1 Tbsp, mixed with a little cold water
Spring Onion Greens– finely chopped
Procedure:-
1. Heat Oil in a medium sized pot.
2. Add Ginger Garlic paste & then add spring onions and saute for a few seconds
3. Add Corn, Green Beans, Peas & Carrots, Celery and Cabbage – saute for 1-2 minutes.
4. Add Vegetable Broth, Salt, Black Pepper and Noodles.
5. Bring mixture to a boil and simmer until Noodles are tender but not overcooked.
6. Add Chili Sauce, Soy Sauce and Vinegar – bring to a boil.
7. Mix 2-3 Tbsp water with the Corn Starch and add it to the soup – bring to a boil.
8. Garnish with Spring Onions and serve hot.
Chicken Noodle Soup
1 cup chicken cut into pieces & cooked
1/2 cup vegetable noodles
1/4 cup carrots cut lengthwise
1/4 cup green peas
1 tbsp soy sauce
2 tsp red chilly sauce
2 tsp cornflour dissolved in one cup of cold water
1 can chicken stock/broth
2 tsp oil
Black pepper powder
Salt to taste
Procedure:-
- In a pan add oil once hot add the vegetables & stir fry them for a minute.
- Then add the chicken pieces along with the chicken stock/broth.
- Then add the sauces & the cornflour dissolved in water.
- Bring it to a boil. Then add the cooked noodles & black pepper powder along with salt.
- Serve hot.
Vegetable Manchurian
Ingredients:-
Cabbage-2 cups(grated)
Carrots-1 cup(grated)
Onion-1(cut fine)
Green pepper-1(cut fine)
Cornflour-2 tbsps
White pepper powder-1/2 tsps
Oil for frying
Salt to taste
Procedure:-
Mix the vegetables with cornflour,salt & white pepper powder & make round balls of the vegetables & deep fry in oil till golden brown.
Ingredients for the sauce
Garlic-5 to 6 flakes
Ginger-1 piece cut fine
2-Green chillies
Cornflour-1 tbs
Water-2cups
Oil-1 tbsp
Soya sauce-1 tbsp
Sugar-1/2 tsp
Spring onion greens-2 tbs(cut fine)
Procedure:-
Heat oil in a pan & fry garlic,ginger,green chillies for 2-3 minutes.Add 2 cups of water & when it starts boiling,put soya sauce,sugar,salt & corn flour mixed in water. When ready to serve, place the fried balls in a vessel and pour hot sauce over it & spread spring onion greens on top.
Asian Chicken Wings
I packet of chicken wings or winglets
1/4 cup of soya sauce
1/4 cup of red chilly sauce or to taste
Salt to taste
Black pepper powder to taste
1/2 cup tomato ketchup
Green onion leaves for garnishing
Procedure:-
(1)Cut the wings into two pieces from between & wash them & pat them dry with a paper napkin.
(2)Then in a small bowl mix the three sauces.
(3)Add salt & pepper powder to the chicken wings. Then pour the sauce mixture on them.
(4)Preheat the oven to 450 degreesF. Put the chicken wings in the oven & broil them for about 15 minutes on both sides till done.
(5)Garnish with spring onion leaves on top.
Szechwan Fried Rice
2 cups sona masoori rice
1/2 cup carrots cut into squares
1/2 cup french beans chopped diagonally
Red pepper cut into long strips
Spring onions & leaves chopped fine
2 tbsp oil
2 tbs szechwan sauce
1/2 cup sprouted beans
1 tsp ginger chopped fine
1 tsp garlic chopped fine
1 tsp soya sauce
1/2 tsp black pepper
Salt to taste
How to make Szchewan sauce:-
I cup red chilli sauce 1/2 cup tomato sauce,1 tbs ginger chopped fine, 1 tbsp garlic chopped fine, 1 tsp sugar
2 tbs green leaves, 2 tbs oil.
Procedure:-
Take a big vessel,put chilly sauce, then put garlic,ginger, sugar, tomato sauce, green leaves. Mix well then finely add the heated oil. You can keep this sauce for a week.
Procedure for rice:-
- Boil rice with oil & little salt & set aside.
- In a wok/kadai heat oil. Once hot add the ginger & garlic & fry for a minute
- Then add the onions. Then add the vegetables one by one & fry for a minute. Then add the sprouted beans.
- Then add the sauces.
- Finally add the rice & black pepper powder & mix well.
- Garnish with spring onion leaves.
Spicy Noodles
1 packet-Veg Noodles cooked as per packet instructions
Oil-3 tbsp
Ginger-Garlic-minced
1 tbsp-Soya Sauce
1/2 tbsp-Red chilly sauce(Sirachia Sauce preferred)
1/2 tsp-white vinegar
1/2 tsp-black pepper powder
1/2 cup carrots-cut lengthwise
1/2 cup green pepper-cut diagonal
Green onion leaves for garnishing
Salt to taste
Procedure:-
(1)Heat a pan. Put the oil in it. Once hot add ginger-garlic mince. Stir for a few seconds then add the vegetables & stir for a minute then add soya sauce, chilly sauce, vinegar, black pepper powder & salt.
(2)Add the cooked noodles to the above & stir the noodles well.
(3)Add green onion leaves once done. Serve hot.
Gobhi Manchurian
Cauliflower cut into florets
2 green chillies chopped fine
1 medium onion chopped fine
1tsp ginger-garlic paste
Soya sauce
Red chilly sauce
2 tsp vinegar
1 tsp black pepper powder
2 tbsp all purpose flour
1/4 cup cornstarch
Tomato Ketchup
Salt to taste
Oil for deep frying
Spring onion greens chopped fine for garnishing
Procedure:-
(1)Make a batter of 2 tsp of cornstarch,all purpose flour.black pepper & salt, Put oil in a pan for deep frying.
Once oil is hot dip one floret of the cauliflower in the mixture & fry in hot oil. Proceedfor the remaining cauliflower.
(2)In another pan take 1 tbsp of oil, once hot add the green chillies & the onion then add the ginger-garlic paste, then add tomato ketchup, soya sauce, vinegar, red chiily sauce & saute till oil separates the masala. Then add the remaining cornstarch dissolved in water & cook till the mixture thickens. Then add the fried cauliflower & see that the sauce coats the cauliflower. Garnish with spring onion greens. Serve hot.
Chicken Chilly
Ingredients:
2 lbs boneless chicken pieces, cut into small cubes
1 onion, cut into long strips
1/2 of a red bell pepper, cut into long strips
1 tbsp soya sauce
1/4 tsp white vinegar
1 tbsp red chilly sauce
1 tsp freshly ground black pepper
2-3 red chillies, slit
1 tbsp minced garlic
1 tbsp cornflour
1 tbsp all purpose flour or maida
1 egg
Salt to taste
Oil
Spring onions for garnish
Procedure:-
1. Marinate the chicken in 1/2 tbsp soya sauce, egg, salt, pepper, flour, cornflour, half the garlic and half the red chilli sauce for atleast 30 mins.
2. Heat a shallow pan with about 1/4 cup oil and lightly fry the chicken pieces until golden brown. Set aside.
3. In the remaining oil, add chopped garlic and the chillies and fry for 2 minutes. Next, add the onions and capsicum and fry until soft (2-3 mins). Add vinegar and mix well. Add the fried chicken and the remaining quantities of ingredients used to marinate.
4. Stir all the ingredients until well combined and fry for another 3-4 mins. Garnish with some chopped spring onions and serve hot.
