Mango Sheera
Sugar-1/2 cup
1 mango peeled chopped & pureed
Butter-1 stick unsalted/ghee
Raisins-1/4 cup
Almonds-10 soaked overnight cut into pieces
Charoli- few soaked for a few hours
kesar-optional
Cardamom powder-1 tsp
water-2 cups approx warmed
milk-4 tbsp
salt-1/4 tsp
Procedure:-
(1)Roast the sooji in butter till you get a nice aroma.
(2)Add saffon strands & cardamom powder. Then add the mango puree & mix.
(3)Then add sugar, raisins, almonds, charoli then add the milk & water & cook until it turns into a smooth texture & cook it fully.
(4)Then you can add butter on the top.
Chicken Quesadilla(Indo-Mexican style)
Soft tortilla as needed
Minced chicken-1/2 1b
Mexican style cheese
Taco seasoning-1 pack
Lettuce or cabbage leaves chopped.
Ginger-Garlic-Green chilly-coriander leaves paste-1 tbsp
Onion-1 finely chopped
Indian chicken masala-1 tsp
Salt to taste
Oil-2 tbsp
Red Chilly powder-1 tsp
Tomatoes-1 finely chopped
Procedure for the Quesadilla :-
(1)Wash the minced chicken & drain completely. Apply ginger-garlic-green chilly-coriander paste alongwith indian chicken masala, salt & red chilly powder.
(2)In a pan heat oil & to it add the onions till onions turn golden brown.
(3)To it add the marinated chicken & tomatoes add 2 cups of water & cook the chicken till fully cooked & dry.
(4)Add salt as needed.
(5)Take one to tortilla & place some of the chicken mixture on it & add the cheese, seasoning & lettuce or cabbage leaves. Layer it in this manner. Then put the another tortilla on top & roast it on a tawa or make it in the Quesadilla maker till cheese melts.
(6)Serve hot.
Spicy Noodles
1 packet-Veg Noodles cooked as per packet instructions
Oil-3 tbsp
Ginger-Garlic-minced
1 tbsp-Soya Sauce
1/2 tbsp-Red chilly sauce(Sirachia Sauce preferred)
1/2 tsp-white vinegar
1/2 tsp-black pepper powder
1/2 cup carrots-cut lengthwise
1/2 cup green pepper-cut diagonal
Green onion leaves for garnishing
Salt to taste
Procedure:-
(1)Heat a pan. Put the oil in it. Once hot add ginger-garlic mince. Stir for a few seconds then add the vegetables & stir for a minute then add soya sauce, chilly sauce, vinegar, black pepper powder & salt.
(2)Add the cooked noodles to the above & stir the noodles well.
(3)Add green onion leaves once done. Serve hot.
Chicken Nuggets(Baked)
Ingredients:-
1/2 cups fine dry bread crumbs(italian seasoning)
1/4 cups grated Parmesan cheese
1/4 tsp. salt
1/4 tsp of ground black pepper
1/2 tsp. dried basil
4 chicken breast halves, skinned and boned
1/4 cup butter, melted
Procedure:-
Combine first 5 ingredients in a plastic bag; shake well. Cut chicken into 1 inch pieces; dip chicken pieces in butter, and shake a few at a time in bread crumb mixture. Place on a lightly greased baking sheet. Bake at 400 degrees for 20 minutes on each side or until tender.
Seekh kebabs
Ground Lamb/chicken -2 lbs
Onion-fried
Coriander – 2 tbsp, finely chopped
Green Chilies - finely chopped
Ginger Garlic Paste – 2 Tbsp
Coriander Seeds – 2 Tbsp
Whole Dry Red Chili – 2
Egg – 1 beaten well
Dry Mango Powder – 1 tsp(optional)
Whole Black Peppercorns – 1/2 tsp
Garam Masala – 1 tsp
Salt – to taste
Bread Crumbs
Method:
1. In pan, dry roast Coriander Seeds, Dry Red Chilies and Whole Black Peppercorns until golden brown and then cool them.
2. Wash and the meat & make it dry.
3. To the Meat, add Fried Onions, Coriander Leaves, Green Chilies, Ginger/Garlic Paste, Garam Masala, Dry Mango Powder (amchur) and Salt.
4. Grind the cooled whole spices into a fine powder and add it to the meat.
5. Mix well & cover and keep in the refrigerator for 2 hour to marinate.
6. Remove from fridge, and mix in 1 beaten egg. Then add bread crumbs to hold it together.
7. Shape them into ovals & roast them in a oven at 400 degrees for 40 minutes till done. Flip them over in between.
8. You can also shallow fry them in oil.
9. Serve hot with any chutney or sauce of your choice.
Buffalo Chicken Wings
Ingredients:-
1.10 to 20 chicken wings
2.1 tsp black pepper
3.Salt as per taste
4.1/2 cup of hot sauce(Frank's or any brand)
5.1/2 cup butter
Procedure:-
1.Wash chicken wings & pat them dry.
2.Cut them in 2 pieces from middle.
3. Sprinkle salt & pepper on them.
4. in a bowl make the sauce by mixing hot sauce & butter.
5. Preheat oven to about 400 degrees & then put the wings inside.
6. Watch them as they change color.
7. Brush them with the buffalo chicken sauce roast them for sometime, then turn them to the other side again brush them with sauce & cook them till done. Enjoy them with blue cheese dressing or just like that.
8. You can also deep fry them.
Sweet Corn Soup
Ingredients:-1 can sweet corn (cream style)
1 can vegetable broth
1 tbsp vinegar
1 tsp soya sauce
1/2 tsp sugar
1/2 tsp white pepper powder
1 tbsp oil
4 cups water
3 tbs corn flour dissolved in 1 cup of cold water
French beans-cut diagonally
Carrots-chopped fine
Celery-chopped into pieces
1 tsp ginger-garlic paste
1 tsp-red chilly sauce optional
Salt to taste
Green onion leaves for garnishing
Procedure:-
(1)In a pan put oil, once hot add the ginger-garlic paste & fry for a few seconds. Then add the vegetables one by one & stir for a few seconds, then add the sweet corn & stir for a minute.
(2)Then add the vegetable broth along with the soya sauce, chilly sauce, vinegar, sugar,salt & white pepper powder along with the required amount of water.
(3)Then add the corn flour dissolved in water & bring it to a boil stirring once in a while.
(4)Finally garnish with green onion leaves on top.
(5)Serve hot.
Barbeque Chicken Wings
Ingredients:-
!1.10-20 chicken wings
2. 1/2 bottle of honey barbeque sauce
3. Salt to taste
4. Black pepper powder
Procedure:-
1.Wash chicken wings & pat them dry.
2.Cut them in 2 pieces from middle.
3. Sprinkle salt & pepper on them.
4. Then apply barbeque sauce.
5. Preheat oven to 400 degrees & place the chicken wings in the oven.
6. Roast them when done.
7. This recipe goes very well with kids.
Chicken Burger/Sandwich
Burger buns
Butter
Chicken without bones
Lemon juice
Salt to taste
Olive oil(2 tbsp)
Black pepper as needed
Red chilly sauce(optinal)
Bread crumbs
Few Spinach leaves
Procedure:-(1)In a mixing bowl mix olive oil, butter, salt lime juice & black pepper powder along with red chilly sauce. Dip the chicken patty into it.
(2)Coat it with bread crumbs & grill them in a grilling pan or oven at 400 degrees F.You can also fry them in oil.(3)Take the buns & on one of them apply butter. Then keep spinach leaves & then the cooked chicken patty. Then top it with the other bun. Serve hot with chips.
Ragi (Nachni) Paratha(Millet flour Bread)
Ragi flour-1 cup
Wheat flour-1 cup
Ginger-Garlic-Green chilli-corinder paste-1 tbsp
Oil-1 tbsp
Coriander-cumin powder-1 tsp
Red chilly powder-1 tsp
Turmeric powder-1 tsp
Coriander leave finely chopped
Salt to taste
Procedure:-
(1)Sift flours.Add the rest of the ingredients.& knead it into a semi stiff dough. Add water as needed.
(2)Make 6-7 small rounds of the dough. Roll each of the round into a circle & put it on a hot griddle or tawa & drizzle it with oil till black spots come on both sides.
(3)Serve hot with coconut chutney.
Hot & Sour Soup
Oil – 1 Tbsp
Spring Onions-finely chopped
Ginger-Garlic paste-2 tsp
Peas & Carrots -– 1/2 cup
Frozen Corn – 1/4 cup
Green Beans – 1/4 cup
Celery – 1/4 cup, thinly sliced
Cabbage – 1/2 cup, thinly sliced
Vegetable Broth/Stock – 4 cups
Veg Noodles – 1 cup
Soy Sauce – to taste
Red Chili Sauce – to taste
Black Pepper – to taste
Vinegar – 1 Tbsp, or to taste
Corn Starch – 1 Tbsp, mixed with a little cold water
Spring Onion Greens– finely chopped
Procedure:-
1. Heat Oil in a medium sized pot.
2. Add Ginger Garlic paste & then add spring onions and saute for a few seconds
3. Add Corn, Green Beans, Peas & Carrots, Celery and Cabbage – saute for 1-2 minutes.
4. Add Vegetable Broth, Salt, Black Pepper and Noodles.
5. Bring mixture to a boil and simmer until Noodles are tender but not overcooked.
6. Add Chili Sauce, Soy Sauce and Vinegar – bring to a boil.
7. Mix 2-3 Tbsp water with the Corn Starch and add it to the soup – bring to a boil.
8. Garnish with Spring Onions and serve hot.
Chapati Noodles
Leftover or fresh made chappaties 4
Pav bhaji masala
Green pepper cut into long strips
Onion cut into long strips
1 tsp ginger-garlic paste
1 tsp cumin seeds
1 tsp red chilly powder
1 tomato chopped fine
2 tbsp oil
Salt to taste
spring onion leaves for garnishing(optional)
Procedure:-
(1)In a pan take oil, once hot add the cumin seeds when they splutter add the onions then add the ginger-garlic paste.
(2)Add the pav bhaji masala with red chilly powder, & then add salt & tomatoes.Cook till oil separates the masala.
(3)Then add the green papper. Take the chapatis two at a time. Roll them as needed. Cut them into long strips starting from the sides. Add them to the mixture & mix them up. Check salt at this point. Garnish it with spring onion greens. Serve hot.
Spinach & Green Pepper Pasta
Spaghetti or Penne or Ziti pasta
1 tbsp butter
1tbsp olive oil
1 tbsp fresh lime juice
2-5 cloves garlic
Basil leaves half cup
1/2 cup parmesan cheese
1/2 cup spinach leaves
1 onion cut into thin strips
1 cup tomato puree
1/2 cup bell pepper cut into long strips
1/2 cup celery finely choppes
1/2 tsp black pepper powder
1/2 tbsp siracha chilly sauce
salt to taste
Procedure:-
1.Bring water to a boil & cook pasta with salt & olive oil.(follow package directions)
2.Drain the water from the pasta & keep it aside.
3.In a pan take butter then add olive oil then put the garlic cloves & stir them.
4.Then sprinkle fresh lime juice & basil leaves then put the onions & the vegetables alongwith salt & pepper & then saute them. Then add the tomato puree.
5.Then put the cooked pasta & the chilly sauce & mix or toss well. Put salt as per taste.
6.Sprinkle parmesan cheese on top.

(3)Then add sugar, raisins, almonds, charoli, kesar, cardomom seeds & cook till it comes to a small smooth texture & cook it fully.
(4)Then you can add butter on the top.
Cheesy vegetable Omlette
Egg one beaten
Salt to taste
Black pepper powder to taste
Green pepper cut into small pieces
Mushroom chopped fine
Green onion leaves (optional)
Parmesan cheese or Monterey Jack cheese shredded
Procedure:- in a bowl take the egg mixture & add the rest of the ingredients to it. Heat up a pan add butter to it & spread the egg mixture on it. Cook till done. Serve with toasted bread.
Daliya(Indian Baby food)
1/4 cup daliya or cracked wheat(you can get it any indian grocery store)
2 tsp sugar
1/4 tsp cardamom powder
1/4 cup water
1/4 cup milk
almonds(optional)
Procedure:-
(1)Take buter in a pan add the daliya & fry for a minute. Then add the rest of the ingredients & pressure cook it for about 4 whistles.
French Fries
Potatoes cut into wedges
Salt to taste
Black pepper powder to taste.
1 tbsp olive oil
Procedure:-
Sprinkle the potato wedges with salt and balck pepper & pour olive oil on them & bake in a preheated oven for about 20 minutes each side at about 350 degress till they become crisp. Serve with tomato ketchup.
